L\u2019am\u00e9lioration des technologies agricoles et la r\u00e9duction du gaspillage alimentaire ont \u00e9t\u00e9 mises de l\u2019avant comme solutions potentielles \u00e0 ces probl\u00e8mes environnementaux. Cependant, le Dr\u00a0Joan Sabat\u00e9, professeur de nutrition et d\u2019\u00e9pid\u00e9miologie \u00e0 la facult\u00e9 de sant\u00e9 publique de l\u2019Universit\u00e9 de Loma Linda, a d\u00e9couvert que des changements en mati\u00e8re de choix d\u2019aliments et d\u2019habitudes alimentaires auraient des effets encore plus positifs sur la durabilit\u00e9 environnementale.<\/p>\n<p>L\u2019\u00e9tude <em>Vegetarian Diets: Planetary Health and Its Alignment With Human Health<\/em> (\u00ab\u00a0Alimentations v\u00e9g\u00e9tariennes\u00a0: sant\u00e9 de la plan\u00e8te et sa conformit\u00e9 avec la sant\u00e9 humaine\u00a0\u00bb) est une m\u00e9ta-analyse de 49 \u00e9tudes publi\u00e9es ax\u00e9es sur les effets des alimentations v\u00e9g\u00e9tariennes et v\u00e9g\u00e9taliennes sur les \u00e9missions de gaz \u00e0 effet de serre ainsi que sur l\u2019utilisation de l\u2019eau et des terres. En combinant les donn\u00e9es des 49 \u00e9tudes, Sabat\u00e9 a d\u00e9couvert qu\u2019un passage des normes alimentaires actuelles \u00e0 des alimentations ovo-lacto-v\u00e9g\u00e9tarienne et v\u00e9g\u00e9talienne r\u00e9duirait les \u00e9missions de gaz \u00e0 effet de serre de 35\u00a0% en moyenne, l\u2019occupation des terres pour la production alimentaire de 42\u00a0% en moyenne et l\u2019utilisation agricole de l\u2019eau de 28\u00a0% en moyenne.<\/p>\n<p>D\u2019apr\u00e8s le Dr Sabat\u00e9, \u00ab\u00a0Bien d\u2019autres \u00e9tudes ont clairement d\u00e9montr\u00e9 les avantages sur la sant\u00e9 des alimentations v\u00e9g\u00e9tariennes et v\u00e9g\u00e9taliennes. Mais cette analyse confirme qu\u2019une transition vers ces types d\u2019alimentation serait \u00e9cologique \u00e9galement.\u00a0\u00bb<\/p>\n<p>Le Dr Sabat\u00e9, \u00e9diteur du livre <em>Environmental Nutrition: Connecting Health and Nutrition with Environmentally Sustainable Diets <\/em><em>(\u00ab\u00a0Nutrition environnementale\u00a0: lier la sant\u00e9 et l\u2019alimentation aux types d\u2019alimentation durables sur le plan environnemental\u00a0\u00bb) publi\u00e9 en 2019,<\/em> dirige le programme de recherche sur la nutrition environnementale de la facult\u00e9 de sant\u00e9 publique de l\u2019Universit\u00e9 de Loma Linda. Ce programme explore les relations entre les impacts environnementaux et sanitaires et les choix alimentaires. De plus, il cherche ultimement \u00e0 am\u00e9liorer la durabilit\u00e9, la sant\u00e9 et l\u2019\u00e9quit\u00e9 des syst\u00e8mes alimentaires.<\/p>\n<p>Un signe pr\u00e9curseur de la hausse de l\u2019engagement des gens \u00e0 effectuer des changements dans leur alimentation en raison des enjeux climatiques s\u2019est r\u00e9cemment manifest\u00e9. En choisissant de ne servir que des repas v\u00e9g\u00e9taliens \u00e0 des centaines de c\u00e9l\u00e9brit\u00e9s et invit\u00e9s, deux galas de remises de prix de renomm\u00e9e de l\u2019industrie du divertissement, les <em>Golden Globes<\/em> et les <em>Screen Actors Guild Awards<\/em>, ils encouragent le dialogue et conscientisent le public sur le lien entre la durabilit\u00e9 agricole et les changements climatiques.<\/p>\n<p>Bien que le domaine des alimentations durables et des impacts environnementaux n\u2019en soit qu\u2019\u00e0 ses d\u00e9buts, a dit le Dr Sabat\u00e9, il a particip\u00e9 \u00e0 un certain nombre d\u2019\u00e9tudes qui d\u00e9montrent clairement l\u2019existence d\u2019un lien entre l\u2019alimentation et les facteurs climatiques. En 2017, il a fait partie d\u2019un groupe qui a publi\u00e9 une \u00e9tude bien connue sur les bienfaits climatiques du remplacement de la viande par des haricots dans l\u2019alimentation. Lui et d\u2019autres chercheurs du programme sur la nutrition environnementale de la facult\u00e9 de sant\u00e9 publique de l\u2019Universit\u00e9 de Loma Linda ont publi\u00e9 plus de 30 articles dans lesquels ils ont examin\u00e9 la relation entre les choix alimentaires, la durabilit\u00e9 environnementale et la sant\u00e9 de la population.<\/p>\n<p>Il souligne toutefois la n\u00e9cessit\u00e9 d\u2019autres \u00e9tudes pour examiner les effets que les changements de m\u00e9thodes agricoles pourraient avoir sur l\u2019environnement dans les pays \u00e0 faibles et moyens revenus.
