J\u2019admets \u00eatre lente \u00e0 comprendre les changements culturels, mais je suis capable d\u2019en interpr\u00e9ter quelques-uns du genre a+, mdr, jsp, etc.<\/span><\/span><\/p>\n<p><span class=\"cap\"><span lang=\"FR-CA\">Les rapports de recherche m\u00e9dicale sont eux aussi remplis d\u2019abr\u00e9viations que j\u2019ai encore plus de difficult\u00e9 \u00e0 suivre. J\u2019en ai trouv\u00e9 une, cependant, que je trouve plut\u00f4t accrocheuse\u00a0: LFV pour l\u00e9gumes \u00e0 feuilles vertes.<\/span><\/span><\/p>\n<p><span class=\"cap\"><span lang=\"FR-CA\">Bien qu\u2019ils soient probablement les aliments les plus riches en nutriments sur la plan\u00e8te, les LFV sont les aliments les moins consomm\u00e9s aux \u00c9tats-Unis. En fait, l\u2019Am\u00e9ricain moyen \u00e2g\u00e9 de 1 \u00e0 30\u00a0ans ne consomme que la moiti\u00e9 d\u2019une portion ou moins de LFV par jour. \u00c0 51\u00a0ans, il en mange une portion par jour, ce qui est toujours bien en de\u00e7\u00e0 des deux \u00e0 deux portions et demie recommand\u00e9es quotidiennement.<sup>1<\/sup> Plus pr\u00e9cis\u00e9ment, les gar\u00e7ons \u00e2g\u00e9s de 9 \u00e0 13\u00a0ans et les filles \u00e2g\u00e9es de 14 \u00e0 18\u00a0ans sont les groupes dont l\u2019apport en l\u00e9gumes est le moins \u00e9lev\u00e9. Les Am\u00e9ricains dans l\u2019ensemble ne respectent les recommandations de consommation de l\u00e9gumes d\u2019aucun sous-groupe, sauf peut-\u00eatre pour les l\u00e9gumes racines gr\u00e2ce aux pommes de terre frites.<\/span><\/span><\/p>\n<p><strong><span lang=\"FR-CA\">Des mines d\u2019or nutritionnelles<\/span><\/strong><\/p>\n<p><span lang=\"FR-CA\">Les LFV sont des mines d\u2019or nutritionnelles. Ils ont m\u00eame le pouvoir de ralentir le vieillissement. Une vaste \u00e9tude de 960\u00a0participants \u00e2g\u00e9s de 58 \u00e0 99\u00a0ans a r\u00e9v\u00e9l\u00e9 que la consommation d\u2019une seule portion (une demi-tasse de l\u00e9gumes cuits ou une tasse de l\u00e9gumes crus) de LFV par jour ralentissait le d\u00e9clin cognitif, \u00ab\u00a0l\u2019\u00e9quivalent d\u2019\u00eatre onze ans plus jeune\u00a0\u00bb.<sup>2<\/sup><\/span><\/p>\n<p><span lang=\"FR-CA\">Une m\u00e9ta-analyse publi\u00e9e en 2016 a examin\u00e9 huit \u00e9tudes de 540\u00a0000\u00a0sujets, dont 26\u00a0173 souffraient d\u2019une maladie cardiovasculaire (MCV) connue. Les chercheurs voulaient savoir si une augmentation de la consommation de LFV r\u00e9duirait consid\u00e9rablement l\u2019incidence de MCV. Les r\u00e9sultats sugg\u00e8rent que oui. Les chercheurs ont d\u00e9couvert que les LFV avaient un potentiel de protection cardiovasculaire multifactorielle.<sup>3<\/sup><\/span><\/p>\n<p><span lang=\"FR-CA\">Et parmi ces facteurs, il y a la liaison de l\u2019acide biliaire. La bile joue un r\u00f4le important dans la digestion en d\u00e9composant les globules gras. Comme la bile est faite de cholest\u00e9rol, l\u2019excr\u00e9tion de bile li\u00e9e est capable d\u2019abaisser les taux de cholest\u00e9rol. Cependant, le r\u00f4le de la bile est bien plus important et complexe que la simple digestion de gras. L\u2019acide biliaire agit comme mol\u00e9cule de signalisation. Des r\u00e9cepteurs d\u2019acide biliaire ont \u00e9t\u00e9 trouv\u00e9s sur des tissus cardiovasculaires, permettant \u00e0 la bile d\u2019avoir un effet direct sur les fonctions cardiovasculaires. Elle peut ainsi modifier le rythme cardiaque et la dilatation des vaisseaux sanguins, et donc, am\u00e9liorer la circulation.<sup>4<\/sup><\/span><\/p>\n<p><span lang=\"FR-CA\">De plus, les LFV am\u00e9liorent l\u2019\u00e9lasticit\u00e9 des vaisseaux sanguins et sont une grande source de min\u00e9raux, comme le magn\u00e9sium, essentiel \u00e0 l\u2019optimisation de la sant\u00e9 et des fonctions cardiaques. Les carences en magn\u00e9sium sont associ\u00e9es \u00e0 l\u2019hypertension, aux MCV, \u00e0 la r\u00e9sistance \u00e0 l\u2019insuline et au syndrome m\u00e9tabolique.<sup>5<\/sup><\/span><\/p>\n<p><span lang=\"FR-CA\">Les LFV contiennent aussi des compos\u00e9s appel\u00e9s \u00ab\u00a0thylako\u00efdes\u00a0\u00bb, essentiels au processus de photosynth\u00e8se. Plus les LFV sont fonc\u00e9s, plus ils sont concentr\u00e9s en thylako\u00efdes, qui contiennent de puissantes substances bioactives comme la vitamine E, la vitamine K, des pigments et des antioxydants comme la chlorophylle, les carot\u00e9no\u00efdes, la z\u00e9axanthine et la xanthophylle.<sup>6<\/sup><\/span><\/p>\n<p><span lang=\"FR-CA\">L\u2019ingestion de thylako\u00efdes a \u00e9t\u00e9 associ\u00e9e \u00e0 la suppression de la faim, des fringales et des pens\u00e9es ax\u00e9es sur la nourriture. Des repas ont \u00e9t\u00e9 accompagn\u00e9s de suppl\u00e9ments de thylako\u00efdes, apr\u00e8s quoi les chercheurs ont mesur\u00e9 les hormones r\u00e9gulatrices de l\u2019app\u00e9tit. Certaines hormones nous font penser \u00e0 la nourriture et nous disent \u00ab\u00a0Nourris-moi!\u00a0\u00bb tandis que d\u2019autres nous disent plut\u00f4t, \u00ab\u00a0Non merci, je n\u2019en veux plus, j\u2019ai assez mang\u00e9.\u00a0\u00bb Ces hormones sont principalement produites \u00e0 l\u2019int\u00e9rieur du ventre.<\/span><\/p>\n<p><span lang=\"FR-CA\">La chol\u00e9cystokinine (CCK) est une hormone qui entra\u00eene la s\u00e9cr\u00e9tion d\u2019enzymes et de bile de la v\u00e9sicule biliaire et qui r\u00e9prime l\u2019app\u00e9tit. Les fois o\u00f9 les participants ont re\u00e7u un plac\u00e9bo avec leur repas, les chercheurs ont observ\u00e9 une augmentation normale de la s\u00e9cr\u00e9tion de CCK environ 30\u00a0minutes apr\u00e8s le repas. Mais lorsqu\u2019il a \u00e9t\u00e9 compl\u00e9t\u00e9 par des thylako\u00efdes, un autre pic de CCK \u00e9tait observ\u00e9 quatre heures apr\u00e8s le repas. L\u2019app\u00e9tit et l\u2019int\u00e9r\u00eat pour les aliments gras et sucr\u00e9s \u00e9taient alors r\u00e9prim\u00e9s. Les hormones qui r\u00e9duisent et celles qui augmentent l\u2019app\u00e9tit \u00e9taient observ\u00e9es tant \u00e0 la suite des repas riches en glucides ou en lipides lorsqu\u2019ils \u00e9taient compl\u00e9t\u00e9s par des thylako\u00efdes.<sup>7<\/sup><\/span><\/p>\n<p><span lang=\"FR-CA\">D\u2019autres \u00e9tudes portant sur le m\u00eame sujet ont examin\u00e9 les m\u00e9canismes plus en profondeur et d\u00e9couvert que les thylako\u00efdes demeurent dans l\u2019estomac et les intestins plusieurs heures avant d\u2019\u00eatre d\u00e9sint\u00e9gr\u00e9s. Ce d\u00e9lai retarderait la digestion et l\u2019absorption des gras et permettrait aux produits digestifs d\u2019atteindre l\u2019il\u00e9on distal, o\u00f9 ils stimulent la s\u00e9cr\u00e9tion d\u2019hormones de sati\u00e9t\u00e9 comme la CCK sur une plus longue p\u00e9riode. <\/span><\/p>\n<p><span lang=\"FR-CA\">Une autre \u00e9tude a r\u00e9v\u00e9l\u00e9 que la suppl\u00e9mentation de thylako\u00efdes r\u00e9primait les fringales, augmentait la sensation de sati\u00e9t\u00e9 et r\u00e9duisait l\u2019app\u00e9tit trois heures apr\u00e8s un repas. Fait int\u00e9ressant, les chercheurs ont observ\u00e9 une hausse de la s\u00e9cr\u00e9tion de CCK justement trois heures apr\u00e8s le repas. Ils ont \u00e9galement not\u00e9 que les thylako\u00efdes et la hausse de la CCK \u00e9taient li\u00e9s \u00e0 une r\u00e9duction de l\u2019envie de manger et des pens\u00e9es ax\u00e9es sur la nourriture et \u00e0 l\u2019augmentation du sentiment de sati\u00e9t\u00e9.<sup>8<\/sup><\/span><\/p>\n<p><span lang=\"FR-CA\">Bien que les salades crues et les smoothies verts soient une excellente fa\u00e7on de consommer des LFV, leur cuisson est \u00e9galement valable, surtout \u00e0 la vapeur.
